.27 Inspection of Frozen Dessert Plants.
A. Upon application for a frozen desserts license, every plant shall be inspected to determine compliance with these regulations. Following the issuance of a license, every plant shall be inspected at least once every 3 months.
B. If violations are found, notice shall be given as provided in the Frozen Desserts Law, Health-General Article, §21-813, Annotated Code of Maryland.
C. Every licensee shall permit access to all parts of the establishment, and shall furnish the Secretary upon his request, for official use only:
(1) A true statement of actual quantities of milk products, mix, or frozen desserts used or produced;
(2) Sources of milk products, ingredients, or mix;
(3) Inspection and tests;
(4) Past records; and
(5) Pertinent information as to persons employed.
