N.H. Code Admin. R. Liq 503.01 - Account of Business
(a) The holder of a
restaurant liquor license shall file and preserve his or her individual sales
slips and maintain a complete and accurate account of business, separated in
such manner that the commission upon audit can determine the total amount of
sales of food as compared to the sales of beverage, liquor and
incidentals.
(b) Such license
holder shall maintain purchase orders, sales slips and register
tapes.
(c) All sales shall be
recorded on a cash register which separates sales of liquor and beverage from
sales of food.
