26 Tex. Admin. Code § 744.2413 - Can I make substitutions and/or rotate the daily menus?

Yes:

(1) Substitutions of comparable food value may be made to the daily menu, but you must keep a record of any substitutions; and

(2) You may rotate menus, but you must keep a record of which menu was used for each date.
