Ill. Admin. Code tit. 20, § 2502.40 - Sanitation
a) All persons
assigned to the food services department shall be screened by medical staff
prior to commencing work in food service areas.
b) Sanitary practices shall be observed in
the storage, handling, preparation and serving of food products.
