Mich. Admin. Code R. 408.18157 - Frying machines and vats; maintenance
Rule 8157. Not less than every 90 days the following shall be accomplished:
(a) The frying
machine or vat shall be washed and boiled out to remove all accumulations of
gum.
(b) The controls shall be
checked for operability.
(c) The
gas and oil burners shall be cleaned and adjusted.
