40 Pa. Code § 11.103 - Dispensing system sanitation
(a)
Coils, taps, connections, siphons, spigots or other parts of a wine dispensing
system shall be cleaned at least once every 30 days by a method which
thoroughly cleans the system and leaves it in a sanitary condition.
(b) Records shall be kept on the licensed
premises indicating the date of each cleaning and the method used.
