37 Tex. Admin. Code § 351.11 - Food
(a) Nutritional Requirements. Meals shall be
well balanced and nutritious.
(b)
Modified Diets. Modified diets shall be provided in the following
circumstances:
(1) upon the recommendation of
a physician or dentist; or
(2) when
a resident's religious beliefs require it.
(c) Staff Meals. Facility staff on duty where
residents are eating need not eat, but if they do, they shall eat the same food
served to the residents unless:
(1) a special
diet has been ordered by staffs' physician or dentist; or
(2) a special diet is required by staff's
religious beliefs.
(d)
Daily Schedule.
(1) Three meals shall be
provided daily.
(2) Two of the
meals shall be hot.
(3) No more
than 14 hours may elapse between the evening meal and breakfast unless a snack
is provided.
(4) Residents shall be
allowed no less than 10 minutes to eat.
