Sec. 411.
(a) The
light intensity shall be at least seventy (70) foot-candles:
(1) on all food preparation surfaces;
and
(2) at equipment or
utensil-washing work levels.
(b) The light intensity shall be at least
twenty (20) foot-candles at a distance of thirty (30) inches above the floor in
the following:
(1) Utensil and equipment
storage areas.
(2) Sink and toilet
areas.
(3) Walk-in refrigeration
units.
(4) Dry food storage
areas.
(5) All other areas.
This includes the areas where food is provided for consumer self-service, such as buffets and salad bars, and rooms during periods of cleaning.
(c) The
light intensity shall be at least twenty (20) foot-candles inside equipment,
such as reach-in and under-counter refrigerators.
(d) For purposes of this section, a violation
of subsection (a), (b), or (c) is a noncritical item.
