Utah Admin. Code R432-12-9 - Dietary Services
(1) The licensee
shall ensure food service facilities and equipment comply with the Rule
R392-100 Food Service Sanitation Regulations.
(2) The licensee shall ensure there is enough
space and equipment, according to the size of the facility and services
offered, for the following:
(a) food
preparation;
(b) handwashing
located in the food preparation area;
(c) serving and distributing resident
meals;
(d) dining space for
residents, staff, and visitors;
(e)
dishwashing, receiving, scraping, sorting, and stacking soiled tableware and
for transferring clean tableware to use areas;
(f) storage, including cold storage;
and
(g) space for at least a
seven-day supply of staple foods and a three-day supply of perishable foods
maintained in the facility.
