Utah Admin. Code R510-104-10 - Food Service Management
(1) Each
local area agency shall ensure that each nutrition provider adheres to
applicable laws and regulations regarding the safe and sanitary handling and
preparation of food and equipment. Each local area agency shall ensure that
each nutrition provider uses food that meets the standards of quality,
sanitation, and safety that are applicable to food processed
commercially.
(2) Each local area
agency shall require accurate inventory records for consumable goods. Inventory
records shall be maintained for four years by each nutrition
provider.
(3) Each nutrition
provider shall provide training for proper sanitation, food preparation, and
portion control to each paid or volunteer staff member who prepares, handles,
or serves food.
(4) Each paid or
volunteer staff member who prepares, handles, or serves food shall have a valid
food handlers permit if required by applicable local law.
