Utah Admin. Code R392-106-4 - General Requirements
(1) The operator
shall:
(a) comply with this rule;
and
(b) be responsible for the
conduct of employees to ensure compliance with this rule.
(2) Microenterprise home kitchens are exempt
from the requirements of Rule R392-100, Food Service Sanitation, unless
otherwise stated in this rule.
(3)
An employee who works with unpackaged food, food equipment or utensils, or
food-contact surfaces for a microenterprise home kitchen is a food handler and
shall meet the requirements of Rule R392-103.
(4) At least one employee shall:
(a) be certified in food safety management
according to the requirements of Rule R392-101; and
(b) maintain proof of food safety management
certification available for review by the local health officer upon
request.
